I Got You is one of our most popular teas at T Project. Though I steep it year-round, I crave this green tea most during seasonal transitions. Robust and full-bodied, our traditional Japanese blend of sencha green tea and toasted rice is invigorating to the body and mind. I add matcha powder to add depth and bring up the umami notes. That extra boost of anti-oxidants, along with all of the other goodies that green tea nourishes us with, sets me up for a long productive day with more clarity and focus. The deep chartreuse color is a bonus, like having a grass meadow in your cup. Enjoy this tea hot or iced.
California Dreamin’ is my recommendation for the sunny days approaching. The first sip transports you to a warm breezy shoreline with bees buzzing and giant tropical flowers popping behind the palms. Ginger, spices, and hibiscus combine to make this tart, ruby-hued elixir a T Project favorite. A dash of honey brings out the zesty spices and nuances. And, when made into a syrup (recipe below), you’ll have refreshing cocktails on the horizon and new dessert ideas for the entire summer.

California Dreamin' Syrup
1 ounce T Project California Dreamin' loose tea
1 1/2 cups water
1/4 cup honey, or more, to taste
Bring the water to a boil in small saucepan. Add the tea and simmer on low heat, about 12 minutes, stirring occasionally. Turn off heat, stir in the honey and leave for 10 more minutes. Strain and save the syrup in a glass jar, refrigerated, for up to 7 days. Use to flavor mineral water or as a dessert syrup on cakes and ice creams.
